BROWN STEW CHICKEN THE OLD FASHIONED CARIBBEAN WAY

The chicken used for this recipe must be seasoned or marinated over night or for 2-4 hours ahead, in order to acquire, the authentic taste its known to have.

1 lb chicken (cut into small pieces)

2 tsp Caribbean Home-Style All Natural Hot-Sauce

4 tsps Madame Wob Dwiyet All Natural Creole Seasoning

1 large onion (sliced)

2-3 tsps of Madell’s All Natural Minced Garlic

1 bunch thyme (1-2 tsps)

3 tbs sugar (or gravy browning)

2 tsps salt (optional)

In a heavy pot (stewing pot), on medium-high heat, add the sugar, allow it to caramelize (brown), until it is almost burnt turning into a dark brown colour (if using gravy browning, add chicken first before adding browning). Add chicken; mix until all the pieces are coloured brown. Reduce heat to medium; add onion, Creole Seasoning, garlic, and remaining ingredients, cook, by turning constantly for 1 minute. Reduce heat to low, cover and simmer for 30 minutes, mix well, cover, and cook for about 20 to 30 minutes until chicken is tender.
